Sri Lankan Oyster Mushroom Curry

Dried shiitake, its soaking water, and rice. Three ingredients doing an enormous amount of work.

Soak the dried shiitake in 3 cups of warm water for twenty minutes. Keep the water — this is the whole recipe.
Lift the caps out, squeeze them gently, and slice. Strain the soaking liquid through a cloth to leave the grit behind.
Fry the onion in ghee with the spices until deep golden. Add the sliced shiitake and fry another two minutes.
Stir in the washed rice, then pour in the strained soaking water, topping up to the right volume for your rice.
Cover and cook on the lowest heat until done. Rest ten minutes before lifting the lid.
